Inside Skirt Steak

Inside skirt is cut from the flank primal.  Try to stay at a medium rare with this cut.
This cut is great with a marinade but is still very flavorful without.
Searing over a high heat for few minutes is a great way to cook this meat but may also be grilled.
Best used for fajitas, tacos, and stir fry.
